1 cup greens of your choice
1/2 cup cooked quinoa 1/2 of a red pear, sliced or pear of your choice.
1/4 cup chopped oranges
2 Tbsp feta or blue cheese (optional)
2 Tbsp chopped walnuts 2 Tbsp dried cranberries 2 Tbsp chopped scallions
Method for salad
Arrange all ingredients in bowl, drizzle with orange juice vinaigrette and enjoy.
Orange Juice Vinaigrette
1 orange, zested and juiced 1 Tbsp apple cider vinegar
1/4 cup olive oil
1 clove garlic, finely minced
1 Tsp freshly ground black pepper
1 Tsp salt or to taste
Method for Orange Juice Vinaigrette
Place all ingredients in a jar with a lid. Shake well. Refrigerate for one week.
Serving for Salad: One
