Stove Top Grilled Veggies
1 zucchini, washed and sliced diagonally, 1/2 – inch-thick
1 yellow squash, washed and sliced diagonally, 1/2 – inch-thick
2 carrots, washed, peeled and sliced diagonally, 1/4 – inch-thick
1 medium red onion, peeled and slice in round disc – 1/4 – inch-thick
2 Tbsp plus 1 Tsp olive oil
2 Tbsp plus 1 Tsp or to taste
2 Tbsp plus 1 Tsp freshly ground black pepper

Method
Heat a grill pan on the stove over medium flame. Add zucchini, yellow squash and carrots to a bowl, toss with 2 Tbsp olive oil,
2 Tbsp salt and 2 Tbsp black pepper until well coated. Separately, sprinkle 1 Tsp olive oil, 1 Tsp salt and 1 Tsp pepper on onion disc, keeping onion disc intact.
Spray or oil grill pan so veggies won’t stick. Grill small batches of veggies for 5 minutes, flip to other side and grill for another 5 minutes.
Flip veggies only one time for diagonal grill marks. Veggies can also be grilled on the outdoor barbecue.
